Ingredients

  • 2 duck breasts
  • 2 tablespoons chima seeds
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

  • Preheat the oven to 400°F (200°C).
  • Score the skin of the duck breasts in a crisscross pattern, being careful not to cut into the meat.
  • In a small bowl, mix together the chima seeds, salt, black pepper, paprika, garlic powder, and onion powder.
  • Rub the spice mixture evenly over both sides of the duck breasts.
  • Heat the olive oil in an oven-safe skillet over medium-high heat.
  • Place the duck breasts skin-side down in the skillet and cook for 5 minutes, or until the skin is crispy and golden brown.
  • Flip the duck breasts and transfer the skillet to the preheated oven.
  • Roast for 10-12 minutes, or until the duck breasts reach an internal temperature of 145°F (63°C) for medium-rare or 160°F (71°C) for medium.
  • Remove the skillet from the oven and let the duck breasts rest for 5 minutes before slicing.
  • Serve the chima seed roast duck breast with your favorite side dishes and enjoy!
