Ingredients
- 2 cups basmati rice
- 1 whole chicken, cut into pieces
- 2 tablespoons mandi spice mix
- 1 onion, sliced
- 4 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 tablespoon butter
- 1 lemon, juiced
- Salt, to taste
- Water, as needed
Instructions
- 1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- 2. In a large pot, heat the vegetable oil and butter over medium heat. Add the sliced onion and minced garlic, and cook until softened and fragrant.
- 3. Add the chicken pieces to the pot and cook until browned on all sides.
- 4. Sprinkle the mandi spice mix over the chicken and stir well to coat.
- 5. Add enough water to the pot to cover the chicken. Bring to a boil, then reduce the heat to low and simmer for 30 minutes, or until the chicken is cooked through and tender.
- 6. While the chicken is cooking, bring a large pot of salted water to a boil. Add the soaked and drained rice to the pot and cook until al dente. Drain the rice and set aside.
- 7. Once the chicken is cooked, remove it from the pot and set aside. Strain the cooking liquid and reserve.
- 8. In a large baking dish, layer the cooked rice and chicken pieces. Pour the reserved cooking liquid over the top.
- 9. Cover the baking dish with foil and bake in a preheated oven at 180°C (350°F) for 30 minutes, or until the rice is fully cooked and fluffy.
- 10. Serve the chicken mandi delight hot, garnished with fresh herbs and a squeeze of lemon juice.
