Ingredients
- 1 turkey, 12-14 pounds
- 1 gallon apple cider
- 1 cup kosher salt
- 1/2 cup brown sugar
- 2 tablespoons black peppercorns
- 2 tablespoons allspice berries
- 2 tablespoons juniper berries
- 2 tablespoons dried rosemary
- 2 tablespoons dried thyme
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 1/2 cup unsalted butter, melted
Instructions
- In a large pot, combine the apple cider, kosher salt, brown sugar, black peppercorns, allspice berries, juniper berries, dried rosemary, dried thyme, garlic powder, and onion powder. Stir until the salt and sugar are dissolved.
- Remove the giblets and neck from the turkey and rinse the turkey inside and out. Place the turkey in the brine and refrigerate for at least 12 hours, or up to 24 hours.
- Remove the turkey from the brine and rinse it well under cold water. Pat the turkey dry with paper towels.
- Preheat the BBQ to medium-high heat. Rub the melted butter all over the turkey, including under the skin.
- Place the turkey on the BBQ, breast side up. Close the lid and cook for 2-3 hours, or until the internal temperature of the turkey reaches 165°F.
- Remove the turkey from the BBQ and let it rest for 15-20 minutes before carving.
