Ingredients

  • 450g chicken breast, sliced into pieces
  • 1 tablespoon vegetable oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 400ml coconut milk
  • 250ml chicken broth
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Salt and pepper, to taste
  • A few drops of natural blue food coloring
  • Fresh coriander, for garnish

Directions

    Heat oil in a large pot over medium-high heat.

    Add chicken and brown for 5 minutes. Remove and set aside.

    In the same pot, sauté onion, garlic, and ginger for 3 minutes.

    Mix in curry powder, cumin, coriander, turmeric, and cayenne for 2 minutes.

    Pour in coconut milk and chicken broth, stir well.

    Return chicken to the pot, bring to a simmer for 10 minutes.

    Mix cornstarch with water and add to thicken the sauce.

    Add blue food coloring, stir, and simmer for another 5 minutes.

    Season with salt and pepper. Garnish with coriander before serving.

Chef's tip

For a healthier option, consider using light coconut milk. Adjust the amount of cayenne pepper to your heat preference.
