Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1/2 cup butter, softened
  • 4 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • Food coloring (optional)
  • Sprinkles (optional)

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add the milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until well combined.
  • Stir in the boiling water. The batter will be thin, but that's okay.
  • Pour the batter evenly into the prepared cake pans.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  • Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
  • While the cakes are cooling, prepare the frosting. In a mixing bowl, beat the softened butter until creamy.
  • Gradually add the powdered sugar, milk, and vanilla extract. Beat until smooth and creamy.
  • If desired, add food coloring to the frosting to create a fun and festive look.
  • Once the cakes are completely cooled, frost the top of one cake layer. Place the second cake layer on top and frost the entire cake.
  • Decorate with sprinkles, if desired.
