Ingredients
- 2 pounds beef stew meat, cut into 1-inch cubes
- 1/4 cup all-purpose flour
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- 4 potatoes, peeled and cut into chunks
- 4 carrots, peeled and sliced
- Salt and pepper to taste
Instructions
- In a large bowl, toss the beef stew meat with the flour until well coated.
- Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
- Add the coated beef stew meat to the pot and cook until browned on all sides.
- Remove the beef from the pot and set aside.
- Add the chopped onion and minced garlic to the pot and cook until softened.
- Return the beef to the pot and add the beef broth, red wine, tomato paste, Worcestershire sauce, dried thyme, dried rosemary, and bay leaf.
- Bring the mixture to a boil, then reduce heat to low and cover.
- Simmer for 1 hour, stirring occasionally.
- Add the potatoes and carrots to the pot and continue to simmer for an additional 30 minutes, or until the vegetables are tender.
- Season with salt and pepper to taste.
