Ingredients

  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 4 potatoes, peeled and cut into chunks
  • 4 carrots, peeled and sliced
  • Salt and pepper to taste

Instructions

  • In a large bowl, toss the beef stew meat with the flour until well coated.
  • Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
  • Add the coated beef stew meat to the pot and cook until browned on all sides.
  • Remove the beef from the pot and set aside.
  • Add the chopped onion and minced garlic to the pot and cook until softened.
  • Return the beef to the pot and add the beef broth, red wine, tomato paste, Worcestershire sauce, dried thyme, dried rosemary, and bay leaf.
  • Bring the mixture to a boil, then reduce heat to low and cover.
  • Simmer for 1 hour, stirring occasionally.
  • Add the potatoes and carrots to the pot and continue to simmer for an additional 30 minutes, or until the vegetables are tender.
  • Season with salt and pepper to taste.
