Ingredients

  • 2 pounds of beef
  • 2 tablespoons of coarse salt
  • 2 tablespoons of ground black pepper
  • 2 tablespoons of brown sugar
  • 1 tablespoon of coriander seeds
  • 1 tablespoon of vinegar
  • 1 teaspoon of Worcestershire sauce
  • 1 teaspoon of paprika

Instructions

  • 1. Slice the beef into thin strips, about 1/4 inch thick.
  • 2. In a bowl, mix together the salt, black pepper, brown sugar, coriander seeds, vinegar, Worcestershire sauce, and paprika.
  • 3. Rub the spice mixture onto the beef strips, making sure to coat each strip evenly.
  • 4. Place the beef strips in a ziplock bag and refrigerate for at least 24 hours.
  • 5. After 24 hours, remove the beef strips from the bag and pat them dry with paper towels.

  • 8. Let the beef biltong dry in the oven for 3-4 hours, or until it reaches your desired level of dryness.
  • 9. Once dried, remove the beef biltong from the oven and let it cool completely.
  • 10. Store the beef biltong in an airtight container or ziplock bag.
