Ingredients

  • 2 cups basmati rice
  • 1 kg chicken or mutton
  • 2 onions, thinly sliced
  • 4 cloves garlic, minced
  • 2-inch piece ginger, grated
  • 2 green chilies, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 cup yogurt
  • 1/2 cup milk
  • 1/4 cup ghee
  • 1/4 cup vegetable oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  • Wash the rice thoroughly and soak it in water for 30 minutes.
  • Heat ghee and oil in a large pot or pressure cooker.
  • Add the sliced onions and cook until golden brown.
  • Add the minced garlic, grated ginger, and chopped green chilies. Cook for another 2 minutes.
  • Add the chicken or mutton pieces and cook until they are browned.
  • Add the turmeric powder, red chili powder, garam masala, cumin powder, and coriander powder. Mix well.
  • Add the yogurt and cook for 5 minutes, stirring occasionally.
  • Drain the soaked rice and add it to the pot. Mix well with the meat and spices.
  • Add enough water to cover the rice and meat. Season with salt.
  • Cover the pot and cook on low heat for 20-25 minutes, or until the rice is cooked and the meat is tender.
  • Once cooked, fluff the rice with a fork and garnish with fresh coriander leaves.
  • Serve hot with raita or salad.
