Ingredients
- 2 cups basmati rice
- 1 kg chicken or mutton
- 2 onions, thinly sliced
- 4 cloves garlic, minced
- 2-inch piece ginger, grated
- 2 green chilies, chopped
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 cup yogurt
- 1/2 cup milk
- 1/4 cup ghee
- 1/4 cup vegetable oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Wash the rice thoroughly and soak it in water for 30 minutes.
- Heat ghee and oil in a large pot or pressure cooker.
- Add the sliced onions and cook until golden brown.
- Add the minced garlic, grated ginger, and chopped green chilies. Cook for another 2 minutes.
- Add the chicken or mutton pieces and cook until they are browned.
- Add the turmeric powder, red chili powder, garam masala, cumin powder, and coriander powder. Mix well.
- Add the yogurt and cook for 5 minutes, stirring occasionally.
- Drain the soaked rice and add it to the pot. Mix well with the meat and spices.
- Add enough water to cover the rice and meat. Season with salt.
- Cover the pot and cook on low heat for 20-25 minutes, or until the rice is cooked and the meat is tender.
- Once cooked, fluff the rice with a fork and garnish with fresh coriander leaves.
- Serve hot with raita or salad.
