Ingredients

  • 4 lamb chops
  • 1 red capsicum, sliced
  • 1 yellow capsicum, sliced
  • 1 green capsicum, sliced
  • 2 tomatoes, sliced
  • 1/2 cup pitted olives
  • 1/4 cup olive oil
  • 1/4 cup fresh mint leaves
  • 3 garlic cloves, minced
  • 1 whole lemon, sliced
  • Salt and freshly ground black pepper to taste

Directions

    Preheat the oven to 200°C (400°F).

    Season the lamb chops with salt, pepper, and minced garlic on both sides.

    Heat an oven-safe skillet over medium-high heat and sear the lamb chops for 3-4 minutes on each side until browned.

    Remove the lamb chops and in the same skillet, sauté sliced capsicum until they just begin to soften, about 5 minutes.

    Add sliced tomatoes and olives to the skillet, season with salt and pepper, and sauté for another 2 minutes.

    Return the lamb chops to the skillet, nestling them among the vegetables, and transfer to the oven. Bake for 10-12 minutes to reach your desired doneness.

    Meanwhile, blend olive oil, mint leaves, and one sliced lemon until smooth to make the mint oil.
