Ingredients
- 1 whole chicken, about 3-4 lbs
- 10 shallots, peeled
- 8 cloves garlic, peeled
- 5 red chili peppers
- 5 bird's eye chili peppers
- 2 teaspoons shrimp paste
- 2 teaspoons turmeric powder
- 2 teaspoons coriander powder
- 2 teaspoons cumin powder
- 2 teaspoons salt
- 2 teaspoons sugar
- 2 tablespoons vegetable oil
- Banana leaves or aluminum foil for wrapping
- Lime leaves (optional, for additional aroma)

Clean the chicken and pat it dry with paper towels.

In a food processor, blend shallots, garlic, red chili peppers, bird's eye chili peppers, shrimp paste, turmeric, coriander, and cumin into a smooth paste.

Coat the chicken inside and out with the sautéed spice paste. Optionally, stuff with lime leaves for extra aroma.
