Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 cup vegetable oil
- 1/2 cup milk
- 1 egg
- 1 cup chopped apple
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 cup unsalted butter, melted
Instructions
- Preheat oven to 375°F. Grease a muffin tin or line with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
- In a separate bowl, whisk together oil, milk, and egg.
- Add wet ingredients to dry ingredients and stir until just combined.
- Fold in chopped apple.
- In a small bowl, mix together flour, brown sugar, and cinnamon for the streusel topping.
- Stir in melted butter until mixture is crumbly.
- Fill muffin cups 2/3 full with batter.
- Sprinkle streusel topping over batter.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Cool muffins in pan for 5 minutes before removing to a wire rack to cool completely.
