Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup vegetable oil
  • 1/2 cup milk
  • 1 egg
  • 1 cup chopped apple
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted

Instructions

  • Preheat oven to 375°F. Grease a muffin tin or line with paper liners.
  • In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  • In a separate bowl, whisk together oil, milk, and egg.
  • Add wet ingredients to dry ingredients and stir until just combined.
  • Fold in chopped apple.
  • In a small bowl, mix together flour, brown sugar, and cinnamon for the streusel topping.
  • Stir in melted butter until mixture is crumbly.
  • Fill muffin cups 2/3 full with batter.
  • Sprinkle streusel topping over batter.
