Adobo Arequipeño is a traditional Peruvian dish hailing from the region of Arequipa. Ingredients
- 2 pounds pork shoulder, cut into cubes
- 1/2 cup soy sauce
- 1/4 cup white vinegar
- 4 cloves garlic, minced
- 1 tablespoon cumin
- 1 tablespoon paprika
- 1 teaspoon oregano
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 bell peppers, sliced
- 1 cup chicken broth
- 1 rocoto pepper, minced (or substitute with jalapeño for a milder flavor)
- 1/2 cup chicha de jora or substitute with light beer

Mix soy sauce, vinegar, garlic, cumin, paprika, oregano, black pepper, salt, and chicha or beer in a large bowl.

Toss pork cubes in the marinade. Marinate in the refrigerator for at least 1 hour or overnight.

Heat oil in a large pot over medium heat. Sauté onion and bell peppers until softened, about 5 minutes.

Remove pork from marinade, reserving marinade. Brown pork in the pot on all sides, about 5 minutes.

Add reserved marinade, chicken broth, and rocoto pepper to the pot. Bring to boil,then reduce heat to low.

Cover and simmer for 90 minutes until pork is tender and stew is thick.

Discard any large pepper pieces before serving.

Chef's tip
For an authentic taste, use rocoto pepper. Adjust the spice level according to preference by substituting with jalapeño for less heat.
